Healthy Dorm Room Herbed Tahini Cauliflower (Vegan, Gluten Free)

A ten minute healthy snack or dinner that can be made in your microwave. Nutty garlicky tahini bright with lemon juice, poured over tender sweet cauliflower and strewn with crunchy floral cilantro.

Ingredients

  • 1 head of cauliflower
  • 1/3 cup chopped fresh cilantro or substitute mint or parsley
  • 1 juice from one fresh lime
  • 1-2 cloves mashed garlic
  • 1/4 cup tahini
  • hot sauce optional
  • 2 tbsp water

Instructions

  1. Cut your cauliflower into quarters and place in a microwave safe bowl, add 1 tbsp water and cover. Microwave on high until tender. Mine took 8 1/2 minutes. 

  2. Mix you tahini, lime juice, mashed garlic and 2 tbsp water in a small bowl until creamy. dd more water or lime juice if you want a runnier tahini sauce.

  3. Carefully uncover your steamed cauliflower because the steam will puff out and might burn you. 

    Drizzle with tahini. Dot with sriracha if you want a little heat.
