Quick Vegan Italian Sausage Marinara:
Need to get dinner on the table in under half an hour? Want a meal that your whole family will enthusiastically enjoy? All you need for this comforting vegan Italian Sausage with a rich, bright, 20 minute Marinara sauce are three basic things:
- Your favorite vegan sausage I use this one but any store bought one will be delicious.
- The pasta of your choice
- A quick and delicious 20 minute tomato sauce
Throw these three things together on a platter and you have a healthy and comforting meal that is ready in 20 minutes. I’d serve this with a fresh winter vegetable salad like this beet salad.

I let Livy read this post before I published it and she reminded me that Cold Mountain was a book she threw towards* me when she reached the dismal end, as we sat together in the living room reading.
And that Of Mice and Men was another book that came whirling towards* me like a broken bird when she came to the painful last page.
*Hanne why do you write that she threw the book towards you rather then at you? Because my daughter couldn’t have hit a barn wall with her aim let alone her fleet-footed Mama.

20 minute quick and comforting vegan sausage and marinara pasta.

In a large pot heat the oil over medium high heat and add the sausages. I used my toothsome Italian sausages but any sausage will be delicious. Cook until they are browned on all sides. Cut or break the sausages into large chunks. I do it right in the pot.

Add the garlic, sauté 1 minute until fragrant and add the tomatoes and salt. I pour the ½ cup of water into the empty tomato can, give it a good swish to collect any tomato product sticking to the sides and then pour it into the pan. Stir well and add the shredded basil and stir. Lower heat and simmer 20 minutes. Taste and if it is too acidic stir in the 1 tbsp of plant milk.

While the sauce is cooking Heat a large pot of salted water to boiling and cook the pasta of your choice according to package directions.

Now drain your pasta. Toss it into the marinara and give it a good tumble. De-pan the whole kit and caboodle into a large platter or bowl. Top with a drift of nutritional yeast. YUM!
