Healthy Strawberries and Cream Granola Bars:
These filling, not overly sweet, Strawberry and cream granola bars are soft on the mouth, studded with ripe strawberries and a scattered with quinoa that adds a playful texture to each bite. No need to cook the quinoa in advance either!
Why I love these bars:
Not only are they vegan, GF, and Oil free: they are also refined sugar free. Therefor you can stick these in your child’s lunchbox, and hand them out at snack time knowing that your child is filling their stomach with whole food goodness, not empty processed calories. Now stick that in your pipe and smoke it! Okay I have no idea what that phrase means. Did I just insult my own recipe? Or you dear reader? All I know is that my mom loved that phrase. As she loved many english phrases like Hoisted by your own petard and How do you like them apples?

Are these filling?
Serving these to my hubby he gobbled up two bars. “Oh wow, these Soooo good he said, so fruity and crumbly and So filling!”
I blushed. Not for the praise. But because I had already eaten five bars and was about to finish off a few more before lunch. Ummm. Okay note to self. More proof that I am indeed a hobbit. My toes may not be furry but inside my chest beats the heart and appetite of a hobbit. Remember the Lembas bread in Lord of the rings?

When Pippin admitted to having eaten four Lembas bread in the movie I felt a soaring kinship with him.
All of the flavor none of the crap! No oil, no sugar. Lots of fiber, and protein. These Strawberry bars are easy, one bowl wonders that will tide you over between meals.
- 1 cup quinoa uncooked
- 2 cups rolled oats
- 2 cups chopped nuts and seeds I used a combo of pumpkin seeds and cashews.
- 2 cups sliced strawberries frozen will work if you defrost them first
- 1 cup non-dairy vanilla yoghurt
- 3/4 cup tahini or any nut butter
- 2 ripe mashed bananas or 1/2 cup pitted dates (chopped)
- 1/2 cup aquafaba liquid from cooking legumes
- 1/4 cup flax seeds
- 3-5 tbsp sugar free strawberry jam or any jam you want! I liked it without the jam but my family likes food sweeter then I do.)
Heat your oven to 350 Fahrenheit. Into a large bowl add the uncooked quinoa, rolled oats, nuts and seeds, sliced strawberries, non-dairy vanilla yogurt, aquafaba, flax seeds, mashed bananas (or dates), and the tahini. Give it a good stir. I prefer to roll up my sleeves and give it a quick (1 minute) massage as if I were massaging kale. But then again I like to play with my food.
Allow to rest ten minutes.
Line a 9X13 baking pan with parchment.
Pour in the batter, it will be quite wet. Smooth the top with a spatula. Place in the middle rack of your oven.
Bake for 20 minutes, remove from the oven and brush the jam over the top and bake for 10 more minutes. Then shut off the oven and leave the door closed for 30 minutes.
Remove from the oven. Allow to completely cool before slicing. Will keep a couple of weeks stored covered in the refrigerator.
