Creamy Tomato Soup Shooters with Mini Grilled Cheese Sandwiches, Vegan, Gluten Free, Appetizers
Everyone’s favorite after school snack has gotten a make over.
Remember those bleak winter afternoons when the sun began to set as you trudged home from school. The snow lit by the last tangerine rays of the sun and then the world dulling to drear grey?
You were so cold and blah as you cast off your backpack and rummaged in the pantry.
The only antidote to school and cold being a can of creamy Campbells tomato soup and a crispy, golden, melty grilled cheese sandwich.
On those icy evening when I trudge out of the house for holiday parties and the wind hits me full in the face. I am again that little girl who just wants her pajamas and a bowl of creamy tomato soup and a golden grilled cheese sandwich. If I saw these fairy sized aperitif glasses on the buffet table I would just about burst with joy.
Finn: It all started a week ago. I was super hungry, and my mom was gone, so I busted out the George Foreman. It wasn’t making the cool grill marks it used to after I tried to use it to dry my shoes, but when it comes to grilled cheese, I’m not that fancy. And when I pulled the sandwich out, I saw the face of God… Literally. I had made a Grilled Cheesus.

A childhood favorite all grown up for the holidays. Serve this rich dreamy creamy vegan tomato soup with perfect little ooey-gooey grilled cheese squares.
- 1 28 ounce Can of crushed tomatoes.
- 1 med onion, diced.
- 2-3 cloves garlic, minced
- 3 cups vegetable stock, I use this to make my stocks.
- salt and pepper to taste
- 3/4 cup soy milk, or your favorite plant milk
- 1/2 tsp smoked paprika
- 6 slices GF bread, my absolute favorite GF bread is
- 6-8 slices GF, vegan meltable cheese slices, I use these
- oil or vegan butter for the pan
- 1/3 cup pumpkin seeds for garnish

Heat your olive oil in a large pot over medium heat. Add your onions and cook stirring occasionally, until they are translucent and golden, about 10 minutes. Add your garlic and sauté one more minute.

Now carefully (you don't want it to splatter) pour in your stock, and canned tomatoes. Sprinkle on your smoked paprika, salt and pepper to taste.

Simmer for 25-30 minutes stirring occasionally. Remove from heat.
Add the soy milk and blend with an immersion blender or in batches in the blender until smooth.

Heat a pan over medium heat and add 1 tsp oil. Swirl to coat. Assemble three sandwiches. Place one gently into the heated pan. Press down on each sandwich. I place a cast iron pan on top of the sandwich if you have one handy. it gives the same effect as a panini maker. Grill for about 3 minutes and flip. Cook until the grilled cheese is golden brown and melty. Repeat until all three grilled cheeses are made.

Ladle the soup into small glasses, shot glasses, aperitif glasses or what ever you have on hand. Sprinkle on 5-6 pumpkin seeds. Cut up your grilled cheese with a scissor or knife. Now skewer each one through with a tooth pick and balance on the glass or serve on the side. You'll notice that I actually used rosemary sprigs for the glasses but only because the store was out of toothpicks.

A little hack for super golden, crispy grilled cheese is to spread mayo (or vayo) on the outside of the sandwich before grilling! These look perfect for a bougie kindergarten graduation party, I love the tiny soup and sandwich pairing idea. What other matches could you make? Country gravy with fairy biscuits? Chicken noodle with tiny toasts? Endless possibilities, simple concept. We have a winner folks.
Now I am picturing a classroom of kindergarteners dressed in black tie and long evening gloves making polite conversation while they nibble teensy Hors d’oeuvres. Just you wait ‘Enry ‘Iggins I have another tiny soup and side painting up my sleeve (not literally) to post this week.

See if you make big cookies you can only have 3 but if they are tiny you can eat dozens.
